Warm Wild Rice Bowl


Ingredients

makes 4 servings

1 C wild rice, dry
5-6 radishes, sliced
5-6 small tomatoes, chopped
1 zucchini, chopped
1 bunch parsley, chopped
1 bunch coriander, chopped
1 bunch microgreens, chopped
1/2 C pepita
1 lemon, juiced
1 t honey
1 t caraway (or cumin) powder
1/4 C olive oil
Salt to taste

Directions

Prep 15 mins + cook 30-45 mins

First off, rinse your rice & drain well. 
Add it to a medium pan with water & cook according to the package directions.
While your rice cooks, prep all your veggies.
In a large bowl, combine the lemon juice, honey, caraway, olive oli & salt
Mix the dressing well, then add in your veggies, stir well.
Once the rice is cooked, remove it from heat & allow for it to cool slightly.
Layer the bottom of your bowl with rice then add a good portion of mixed veg. 
Serve warm or let everything completly cool & pack for lunches!
