Warm Potato Salad


makes 4 servings

4 large red potatoes, cubed
1/2 red onion, minced
2 apples, chopped
1/2 C almonds, chopped
1/2 C sunflower seeds
1/2 C pumpkin seeds
1/4 C dried cranberries
1 large handful of parsley
1/4 C olive oil
1 T red wine vinegar
1 t italian spices
Salt & pepper to taste
1 avocado, sliced


5 mins prep + Cook 20 minutes

Start by cutting your potatoes into bite sized cubes & add them to a large pan. I keep the skin on, but I brush it really well first.
Add just enough water to cover your potatoes and cook them on high for 10 minutes (or until the water has evaporated), then add little splash of olive oil.
Once the potato are tender, transfer them into a large bowl & let them cool a little. 
Mix in your red onion, apple, almonds, sunflower, pumpkin, dried cranberries & parsley.
Add olive oil, red wine vinegar, spices, salt & pepper.
Serve with avocado slices.
