Sweet Potato & Northern Bean Burger

Now, I don't know if it's a North American thing, but burgers really make the world go round for quite a few people I know.

I have to say, however, that beef burgers really don't quite do it for me. These, on the other hand, are succulent... and I just want to keep eating more!

Yes, they are sweet potato based. Yes, I love me some sweet potato. Let's be honest though, who doesn't.


Makes 4 patties

2 C mashed sweet potato
1 C great northern beans
1 C rice
1/2 C ground oats
1/2 C red onion, finely chopped
2 1/2 t cumin
1 t smoked paprika
Salt and pepper, to taste
1/2 tsp chipotle powder or 1 T chipotle sauce

Slider buns (I use Udi brand)


30 mins prep + 10 min cook

Rub with olive oil and place face down on a foil-lined baking sheet.
Put them in the oven at 400 for about 30 minutes, until soft.
While potatoes are baking, cook rice.
Add beans to a mixing bowl and mash them.
Then add sweet potato, rice, green onion, oat meal and spices.
Mix to combine.
Taste and adjust seasonings as needed. Add more rice or oats if the mixture feels too wet.
Roll into patties & either bake them at 350 for about 30 mins or pan fry them until golden.
Serve on slider buns with salad on the side.
