Sweet Overnight Oats

Overnight oats are the lazy gal's go-to breakfast. I can't speak for you, but in my case it's like going to bed knowing there's something delicious waiting for me on the other side of dream land. How much better can life possibly get anyways?


Ingredients

makes 4 portions 

1 1/3 C steel cut oats
2 C coconut milk
3/4 C water
1 t cinnamon
1/2 t vanilla
1 C chia seed

Suggested Toppings

Granola
Nut butter
Seeds
Nuts
Fruit (bananas & berries are divine)

Note: The topping for the Chia Jam Parfait is divine on this. 
 

Directions

5 mins prep + overnight in the fridge

Mix all the ingredients together & place them in 4 mason jars.
The mason jars should be about half full with the mixture.
Refrigerate overnight.
In the morning, grab one from the fridge, fill your jar with toppings & go!
