Spicy Veg Croquettes & Cabbage Salad

croquette or patties are perfect for a light vegetarian dinner

Ingredients

MAKES 4 PORTIONS 

1 15 oz can of chickpeas, drained, rinsed & mashed
½ red onion, finely diced
1 small zuchinni, grated
3 T finely chopped cilantro
2 garlic cloves, minced
3 T red wine vinegar
3 T sriracha sauce
1 t cumin
2 t black pepper
½ t sea salt
1 cup oats
2 t olive oil

Salad

1 C red cabbage, shredded
1 small red onion chopped
Chopped cilantro
1 C plain yogurt
1 T apple cider vinegar
1/4 C cilantro, chopped
1 large avocado, sliced - optional

Directions

Prep 10 Mins + 30 mins baking

Grab your chickpeas, oats, zucchini, garlic & all the spices.
Blend everything together & form soup spoon sized croquettes. 
When you're ready to eat: pan-fry for 2-3 minutes on each side & serve hot.
Chop some cabbage, cilantro & red onion for the salad.
Make a quick creamy dressing with the yogurt, apple cider vinegar & cilantro. 
Top with pumpkin seeds, assemble and enjoy!
