Simply Eggs & Potato

Potato & eggs are a quintessential north american breakfast. They're fast and easy, which is probably why every diner in town serves them. Doesn't sound like the healthiest meal on the planet if diners are serving it right? Well, actually it's quite satiating and if you have a reasonable amount of potatoes (not cooked in bacon grease) then it's quite alright in my books.

Here, I've paired it with some fresh arugula leaves & parsley for an extra little peppery zing, but feel free to add what ever your heart desires!


Ingredients

makes 2 portions

4 eggs
2 fist sized potatoes, chopped
1 T coconut oil
Small bunch of arugula, chopped
Small bunch of parsley, chopped
Salt & pepper to taste

Directions

5 mins prep  + 15 mins cooking

Place potatoes in a pan over medium-high heat along with the coconut oil
Cook the cubes until all sides are lightly browned
Once your potatoes are ready, move to one side of the pan
Add your eggs, then cover until they are set to your desired doneness
Boom! Breakfast!
