Simple Dahl With Rice & Yogurt
Dahl (the Indian word for lentil, but also the name of this dish) is my go-to dinner, lunch & even breakfast when the world of food planning fails me. I will be honest with you. There are moments where I wonder how I pull off all this planning. The answer is probably out of laziness. Truth be told, I don't want to spend hours in the kitchen every single day.
Heck, I don't have the time even if I wanted to. I cannot, however, bring myself to serve up packaged or frozen foods from the grocery store and call it a meal. I just can't. So somewhere in there, there has to be a compromise.
Plan all of our meals, all of the time. Cook some of our meals, ahead of time. Prep some of our meals, some of the time. These are all realities of our lives. We just try to make the most of what every week brings.
Ok, back to dahl.
Here's a wondrous little truth about dahl. You can put just about any veggie into it, and it will taste amazing. Seriously. This is our "Oh my goodness, I can't believe I made 14 recipes with cauliflower, and I still have some in the fridge" fallback recipe. Or whatever that veggie may be. It all goes in.
Also, dahl freezes well, so don't worry about making too much as it can be frozen for a quick dinner or lunch on a week where you don't feel like cooking. It happens to the best of us, no judgment here.
MAKES 6 PORTIONS
2 T coconut oil
1 large onion, finely chopped
5 garlic cloves, finely chopped
2 C leftover veggies, chopped (I'm using carrot & cauliflower)
2 C red lentil
6 C water
1 T cumin
1 T curry powder
1/2 t chili powder
1/4 t chili flakes
1/2 t cayenne
1 lemon, juiced
1 T honey
1 t Himalayan salt
Yogurt - for serving
PREP 5 MINS + COOK 20 MINS
Add coconut oil, garlic & onion to a large pot, stir until fragrant about 5 minute
Stir in all of your spices: cumin, chili powder, chili flakes, turmeric, curry powder & cayenne
Add your veggies and stir for 1 more minute
Add water and bring up to a boil
Once boiling, add lentil and stir so nothing sticks
Boil covered for 10 minutes, then remove from heat
Serve with rice & yogurt
