Not Your Typical Aussie Bites



Makes 24 bites

1 3/4 C rolled oats
1/4 C dried cranberries
1/4 C dates, chopped
1/4 C ground flaxseed
1/4 C shredded coconut or cocoa nibs
1/4 C hemp hearts
1/4 C chia seeds
1/4 t baking powder
1 t salt
1/4 C honey
1/4 C unsalted butter, melted
1/4 C coconut oil, melted
1/2 tsp vanilla extract

Note: This is my variation on the recipe but feel free to swap out the seeds, dried fruit & grains for different ones to make it your own.


Prep 10 mins + bake 15 mins

Preheat oven at 350
In a medium sized bowl, mix 3/4 C oats, cranberries, dates, flax, shredded coconut, chia seeds, salt & baking powder. 
Add the remaining cup of oats to a blender and buzz until the oats are ground. 
Add this to the bowl along with the honey, butter, coconut oil & vanilla. 
Mix well & divide batter evenly between the 24 holes of the mini muffin pan. 
Bake in the oven for 12-15 minutes until the edges are golden bown.
Remove from oven and let cool for about 10 mins before unmolding.
