More Veg Than Dahl


Ingredients

makes 6 portions

2 C ancient grain mix (millet, quinoa & buckwheat)
2 T coconut oil
1 large onion, finely chopped
5 garlic cloves, finely chopped
3 C leftover veggies, chopped (I'm using carrot, celery, pepper, leek)
2 C red lentil
6 C water
1 T cumin
1 T curry powder
1/2 t  chili powder
1 inch ginger, chopped
1/4 t chili flakes
1/2 t cayenne
1 lemon, juiced
1 T honey
1 t Himalayan salt
Yogurt - for serving

Directions

PREP 5 MINS + COOK 20 MINS

Add coconut oil, garlic & onion to a large pot, stir until fragrant about 5 minute
Stir in all of your spices: cumin, chili powder, chili flakes, turmeric, ginger, curry powder & cayenne
Add your veggies and stir for 1 more minute
Add water and bring up to a boil
Once boiling, add lentil and stir so nothing sticks
Boil covered for 15 minutes, then remove from heat
While your veggies cook, get your grains started & cook them according to the package instructions.

Serve with grains & yogurt
