Happy Hummus & Veg
I was properly introduced to hummus by an Italian lady who once called Jerusalem her home. To her, store bought hummus is not overly expensive for no reason but also nowhere near as tasty as it could be. I have to agree with her on all accounts.
The main difference between hers and mine is that she makes it the traditional way, with tahini. Where I prefer it without. It's a matter of taste really, but this is how I prefer it & I hope you love it as much as I do.
Ingredients - MAKES 4 PORTIONS
1 15 oz can of chickpeas, drained and rinsed
2 lemons, juiced
1/4 C olive oil
1/2 C water/vegetable stock (use up to 1/2 C of water to get a smooth blend)
1/2 t cumin
1/2 t paprika
1/2 t sriracha
1 clove garlic
Directions - 10 Mins
Place everything in a food processor & blend until smooth.
