Ful Salad

The mix of garlic, parsley, tomato & lemon makes the most boring of ingredients into a perfect crescendo of flavors. It's the quintessential middle eastern salad (fatoush) but without the pita and with some beans instead. 

This way you get all the flavor and none of the guilt! Thank me later darlin'!


Ingredients

Makes 2 portions

1 14 oz can of fava beans
1 pint cherry tomato, halved
2 green onions, chopped
1 lemon, juiced
1 large bunch parsley, chopped
2 cloves garlic, mashed
1-2 T olive oil
Salt

Directions

10 mins

Rinse your fava beans & add them to a large bowl
Add your tomato & green onion, give it a good stir
Add salt, garlic & olive oil into a mortar and mush it up into a paste
Add lemon juice to stretch it into a dressing
Mix it into salad & boom! Simple dinner!
