Ful madames is a traditional Lebanese breakfast that I've grown fond of over the years due to its fantastic flavour and simplicity. It's ready in a jiffy & has big bold summery flavours. Sure, it's not eggs and hash, but it's just as protein dense and will surely tide you over until lunch. Oh, and if you don't want to eat fava for breakfast, please try it for lunch or luncheon!
You can have it on its own, but I also like having it tapas style. That is, with some olives, fresh tomatoes, labneh & pita on the side. Some people even like to have it with a side of bread & honey. To each their own, I suppose.
In any case, it's delightful accompanied by a stiff cup of black tea! Cheers.
makes 2 or 4 portions
1 14 oz can of fava beans
1 pint cherry tomato, halved
2 green onions, chopped
1 lemon, juiced
1 large bunch parsley, chopped
2 cloves garlic, mashed
1-2 T olive oil
Notes: To stretch this recipe to four portions, simply serve it tapas style.
5 mins prep + 10 mins cook
First, rinse your fava beans & drain them
Next, add the olive oil, lemon, garlic, cherry tomato & salt and cook in a medium pan over medium heat until it begins to bubble.
Once everything is heated through, mash about half of the beans and mix well.
Serve hot with the chopped parsley.
