Eggs meet avocado

Seems like everyone on the paleo diet is trying to convince the world that eggs & avocado are a great combination. I have to say, I totally agree with them, for my personal taste however, I just can't come around to the idea of baking an egg inside an avocado. It just tastes off to me.

So, here's the next best thing, in my opinion anyways. Actually, I'd even say it tastes far better than the baked version. It's super simple, takes 5 minutes to throw together & it's super satisfying! What more do you want from breakfast!?


Ingredients

makes 2 portions

4 eggs
1 avocado
1 C mixed baby greens (arugula & kale)
1 t avocado oil

Directions

cook 5 minutes

Crack your eggs into a hot pan with a little avocado oil, cover. 
Depending on how cooked you like your eggs, it could take 3-7 minutes to cook
Serve with half an avocado & greens.
