Chipotle Mushroom Stir Fry


makes 4 servings

1 C dry rice, cooked
8-10 large white mushroom, sliced
1 sweet pepper
2 zucchini
2-3 T chipotle sauce
1 T olive oil
4 garlic cloves, minced
1 red onion, minced
4 eggs, pan fried
1 bunch of parsley, chopped


5 mins prep + 20 mins cook

Start with a large pan over medium-high heat, add mushrooms & cook them down until they've released most of their water, about 10 minutes.
While they cook, get your rice started & chop up your other veggies.
Add olive oil, garlic, chipotle sauce & onion to the mushrooms, stir until fragrant.
Next, add your sweet pepper & zucchini, stir well.
Cook for another 5 minutes or so then remove from heat.
Add parsley & transfer to bowls with rice for serving. 
You can quickly fry an egg for each person, but it's totally optional.
