Frozen Berries Chia Jam Parfait
All yummy everything. This is such an easy way to breeze through the morning! I have to say I've rediscovered parfaits & plan on making them part of my life a little more often.
Ps. You could swap out the yogurt for coconut cream if you want to make this dairy free!
MAKES 2 PORTIONS
1 C frozen berries, thawed & blended
1 lime, juiced
3 T chia seeds
1 C plain yogurt
1 C rolled oats
1/2 C pumpkin seeds
1/2 C hemp hearts
1/2 C any other seeds / nuts you love
1/2 C shredded coconut - optional
1 T coconut oil
1 t cinnamon
1/4 t nutmeg
1 T Himalayan salt
2 T honey, drizzled
Prep 10 Mins + cool for at least 30 mins
First, make your "jam"
Blend the thawed berries & lime until smooth
Place in a mason jar or bowl, stir in chia seeds & place in the fridge covered
Next make your granola
Grab a large skillet, add coconut oil & let it melt
Next add your oats, pumpkin seeds, hemp hearts, other seeds & stir until evenly coated
Season with cinnamon, nutmeg & salt
Keep stirring until oats are golden brown
Remove from heat, drizzle honey and let cool
Once cooled, this can be stored in a mason jar for up to a week
When you're ready to serve, layer yogurt, granola & jam in your favorite glass & enjoy!
