Butter Lettuce & Spring Radish Salad


makes 2 servings

1 14 oz can lentil, rinsed
1 small head of boston lettuce, chopped
6 spring asparagus, chopped
4-5 small tomatoes, chopped
4-5 spring radish, chopped
2 oz microgreens
6 T olive oil
1 lemon, juiced
Ground caraway


5 mins prep

Mix your lentil with lettuce, asparagus, tomato, radish & microgreens.
Sprinkle caraway, salt & pepper on top then add your olive oil & lemon.

Note: Serve with a hard boiled egg for some extra protein!
