Brussel Sprouts & Cran Salad

This simple salad packs really well ahead of time & tastes fresh like spring. Perfection on a plate I tell you! Feel free to pack it with tuna or some croquettes for added protein but it makes a fine light lunch on its own. Depending on the day, I also like to eat it with half an avocado to get those good fats in! 


Ingredients

MAKES 2 PORTIONS 

4 C brussel sprouts, chopped
1 C dried cranberries
1 C almonds

Dressing

1 lemon, juiced
1/4 C olive oil
1 large sprig of dill

Directions

Prep 10 Mins

Chop up Brussel sprouts
Mix in cranberries & almonds
Add dressing and toss until everything is well coated
Fill 2 mason jars & keep them in the fridge
