Beet, Carrot & Apple Juice
Many people don't like beets. So when I tell them that I go out of my way to juice some, they look at me like a horn just grew out of the middle of my forehead.
Truth be told, for most it's an acquired taste, that's why I add other things in there (like apple & carrots). The trick to this juice is fresh beets. The kind you get right off the farm stand. Otherwise there can be a rather unpleasant earthy tone to the whole thing and that's just not a great way to initiate someone to beet juice!
makes 2 portions
1 large beet, in chunks
2 large carrots
1 lemon, juiced
Note: If you put this bad boy in the fridge, make sure to leave as little air as possible in the container. The oxygen will make the juice loose all of it's benefits!
