Tuna Stuffed Avocado & Roquette

Tuna salad

This lunch is stupid simple. Seriously, I don't know why everyone isn't just eating this all of the time! 

To make this into a vegetarian lunch, you could swap the tuna for beans and have a bean salad with your avocado. It's rather delightful in that fashion also! 


Ingredients

MAKES 1 PORTION 

1 large avocado
1 bowl of arugula
1 small can of tuna
2 T red onion, chopped
2 T cilantro, chopped
1/2 lime, juiced
Salt & pepper

Note: To make this recipe vegetarian, simply swap out the tuna for lentil or kidney beans.

Directions

Prep 5 Mins

Grab your tuna, cilantro & red onion. Mix together well.
Add arugula to a bowl along with the tuna mix & avocado
Squeeze lime juice, salt & pepper
