Avocado & Tomato Spicy Salad
I have absolutely no idea why I never shared this recipe before. I guess tomatoes weren't quite in season then... maybe that's why.
Anyways, I eat this all the time. I pack it for lunch. I even sometimes wish I was eating this instead of whatever is on my plate. It's simple, satiating and unpresumptuous.
When I pack this as a lunch, I simply pack a tomato, an avocado and arugula in a large container. They go in whole and I pack a knife to cut everything just before eating. It takes a second and it keeps everything from going soggy.
Also, in case you haven't noticed, the arugula is from Reclaimed. They're a small scale urban farm here in Edmonton, Ab. Freshly picked arugula is spicier & crunchier than the one you get at the grocery store. The extra peppery kick makes this salad divine! Just sayin'
makes 2 servings
1 bunch arugula
1 T wine vinegar
Drizzle of sriracha
Cut the avocado & tomato in cubes
Place it over a bed of arugula
Drizzle wine vinegar & sriracha
Serve with pea shoots.
