Arugula & Basil Pesto Pasta

Gotta love 20 minute meals! Seriously this recipe is SUPER tasty but takes only a few minutes to put together. It's a treat kind of meal though, as it's really carb heavy & doesn't have that many veggies to balance it out. 

If you're watching you carb intake, I suggest you make smaller portions & serve with a large yet simple salad (think tomato, cucumber & greens). 

If you're into dairy, you can accompany it with a side of brie, like we did. We even went all out and got some GF baguette. Now, I know it's a little excessive but I wanted to include this in the meal plan to let you know that sometimes excess is okay. Treating yourself to things you love is okay.

You don't need to feel guilty about it, you just need to eat more veggies tomorrow! 


Ingredients

makes 4 portion

1 lb box of GF pasta
1 bunch basil
1 bunch arugula
4 cloves garlic
2 T nutritional yeast - or parmesan
1 t coarse salt - sea salt works fine
Olive oil

To serve (optional):

Salad
Olives
Brie
Kombucha
GF baguette 

Directions

prep 10 mins + cook 10 mins

First, cook your pasta according to the directions on the box. Usually it's 7-9 minutes in boiling water. 
To make the pesto, add basil leaves, arugula, garlic & nutritional yeast to a food processor ( I also make it by hand with a mortar & pestle but it take a LOT longer).
Buzz a few times, then add some olive oil, buzz again and repeat until you get somewhere between a paste & a sauce.
Add a little salt & buzz a few more times.
Once pasta is ready, quickly drain & add pesto.
Mix well & serve!
